menu planning: week 36

Life is mind-boggling busy right now.  I almost didn’t set down to plan a menu and write this post.  But I know it’s important to do so, if I really want to make healthy changes for our family.  And I really do.

I’m proud to say I actually stuck with last week’s menu!  We just had the black bean and sweet potato chili tonight, and it was a huge hit!  Even my picky three year old cleaned his bowl (although that might be because I was holding his tortilla hostage).  Audrey, I meant to take a pic of the paella and post the recipe, but I ran out of time.  Naturally.  But here’s a link to the recipe on my old blog — it’s one of our favorite stand-bys.

On this week’s menu:

  • Fifteen bean soup, as requested by my six year old!
  • Hawaiian Sweet and Sour Vegetables with Brown Rice (Donna Klein)
  • Thai-Style Stir-Fry with Crispy Tofu and Hoisin Sauce (Donna Klein)
  • homemade pizza

Another week of near-insanity is about to commence.  This living in another country thing is AWESOME, except when there is paperwork involved, or completely different school systems with seemingly arbitrary rules, or contractors to deal with in a language you don’t quite get…  But, the beans are soaking, and I’ve got at least one thing planned out and under control.  That’s got to count for something!
